This was the starter I made for my Christmas Day lunch. It’s a salmon mouse in a smoked salmon parcel with caviar, advacado, horse radish cream and beetroot. It’s a really simple dish with a powerful taste.
The mouse was made with Creme Fraiche, smoked salmon, capers, anchovies and lemon juice. It’s simply all whizzed together and placed in ramekins lined with smoked. This is then left in the fridge to cool.
It’s a perfect starter, not to heavy and perfectly fresh.

Last night we went to my friends gig (SLUG) at the Manchester Deaf Institute and it was a brilliant night. Aside from the fact that the band were truly brilliant, the venue was pretty darn good too!
The building its self is a visual delight both outside and in, extremely quirky, and the menu (although limited) wasn’t half bad!
Frozen cocktails: £4! This is bonkers. So cheap for Manchester and they didn’t taste watered down either!
Food: I just wanted a nibble so went for the nachos. They were yummy, they came with a grilled pineapple salsa which really differentiated them. My friends had burgers and wings and rated them highly.
I would defiantly go back here and in fact I plan to go to the wednesday taco and tequila night!!
Whilst in Thailand we were unbelievablely healthy. I mean seriously, considering we were on holiday, our “naughty” consumption remained very reserved.
However on our second to last day I rebelled against the crazyness and ordered us a poolside snack to share. We went for mushroom quesadillas and a satay selection. They were so very tasty, I wished I’d ordered more food earlier! The quesadilla were particularly tasty, if not a little greasy…..but may that’s what’s made them good!!

Yesterday I was simply too indulged to even pick up my phone but here’s a quick insight in to the Christmas lunch I made me and Mr Jones.
Starter: Scallops fried with black pudding, resting on a caramelized apple slice with a crushed pea purée, a a bacon crumb and a balsamic fig reduction. Very proud to say all my own recipe and it was BEAUTIFUL!!
Main: Whole duck stuffed with citrus fruit and all the accompanying trimmings (sorry no pic, I dived into it before taking a snap!!)
Desert: (Eaten another 3 hours later due to fullness!) a Christmas pudding cheesecake with a sour Christmas berry syrup and sweet caramel sauce…all from my own imagination and all home made!
(The cheesecake is basically a NewYork cheesecake recipe but I made the base out of Christmas pudding and added cinnamon and nutmeg to the cheesecake mix…..festively delicious)
