I loved making this, it required a few hours but it’s beauty in taste and look, makes the effort worth it!

Broken down it compromises of Kirsh cream mouseline and strawberries sandwiched between to thin sponge cake layers with a marzipan top. That makes it sound easy….it was not 😊

I made this for our local Rose Queen Festival, hence the roses on the top!

Root beer cake

I like to please the fella every once in a while and as he is fond of root beer, I thought I’d envelope it in to a cake!

Super simple, just use the usual sponge cake recipe but add 3tbsp of root beer to give the sponge that added flavour.

Also, whip up a typical cream cheese frosting but again, add root beer to taste. Be careful here, add it slowly. If you add too much it will be too runny to use!

Protein cookies

Today I have been prepping for the week which included making his and hers protein cookies for an extra post gym protein hit!

These cookies are really simple and easy to do and consist mainly of whey powder and peanut butter. They are delish!

I like little nibbles like this, they taste great and I know when I eat them, I’m giving my body what it needs.

Profiterole Passion

I have been making a lot of profiteroles recently. After the 1st time making Chox pastry I just could not believe how easy it is to do and since then I have been a profiterole baking machine.

I have often heard people say they get a lot of enjoyment out of making bread, that they like the way the gluten comes together and the dough forms. For me, that feeling comes when the wet, gloopy Chox dough transcends into a glossy thick mixture. It’s my therapy.

My favorite filling at the moment is a passion fruit cream, the tang of the passion fruit is amazing with the bittersweetness of the dark chocolate top.

  
To make the cream simply sieve your passion fruit so your left with a juice without the pips, whisk up a pot of double cream and add the juice plus sugar to taste. You can play around withthe measurements  here, I like a really strong passion fruit hit so I go heavy in the passion fruit!
