There is not a single way I could promote this as healthy but I’ll try….

  1. It is made of lean beef
  2. It has salad 
  3. It’s fresh

Convinced? 


No, I would be either! This is a beast of a burger, 2 home made beef patties, lettuce, tomatoe, gherkins and a whole lot of cheese!!

Really simple parties, just beef mince, seasoning, egg yolk and chopped onion.

So this weekend I had an amazing opportunity to chef with a great team under Jimmy Garcia!


It was my first time in a professional kitchen but the guys made me really welcome and put me to work!

It was an utterly fantastic experience, I hope there’s more to come!


 

Cured eggs: Day 5

Vegetarian

So yesterday, day 4, the eggs were ready to be removed from the salt and sugar curing mixture.

You need to carefully scoop them out, gently rinse off the remains salt and then dehydrate them in the oven for 2 hours at 50 degrees F.


Then that’s it, you have cured eggs! They can be stored for a month in an airtight container in the fridge.

Enjoy. I know I will 😊

What do I do when I’m bored? Get in the kitchen! 😄

I pulled out an old weight watchers recipe book and decided on a beautiful summer dessert in homage to the glorious weather we are having here in Cheshire, U.K.


This is such a satisfying recipe to undertake, watching the egg whites transform into a heavenly, shiny, marshmallowy mix is just such a great thing to experience. 


It’s slightly time consuming but really requires little effort….just some waiting. Once you have mixed the meringue you can take 60minutes for yourself (I watched some “4 in a bed”!) whilst you wait for it too cook and cool. Then it’s simply a matter of filling and rolling.


Now I’m normally quite good at weighting but I had to dive right in and cut a slice. Heaven!!!

It’s a really versatile recipe too, I think next time I plan to make this for friends but I’m going to fall to the darks side and use cream and caramel! 😈

Chilli with a cheat

I love a good chilli and it can’t be beaten when you have some lovely big nachos to scoop with! 

I’ve recently started making a cheats version of home made nachos, simply cut up some tortilla wraps, drizzle in oil (I use chilli oil) and bake for 5minutes on 180 fan. (Be careful as they can quickly burn)

 
They are totally tasty with a great crunchy texture.

Pasta a la Monday!

After a 5.45 am start, a 90 minute gym session, a long day in the office and a pitch black dog walk…tonight my body craved carbs!

I whipped up this simple yet tasty tomato and chicken pasta (it would have been 100% healthy too if not for the cheeky addition of creme fraiche) 

  

  • Boil some Whole wheat pasta
  • Whilst it boiling fry Shallots and Courgette in Olive oil
  • Add a tin of chopped Tomatoes
  • Season
  • Stir in cooked chicken breast pieces and the Creme Fraiche
  • Mix into the pasta and sprinkle with Parmesan to taste.

Easy peasy and done in under 20 minutes. It doesn’t lack on flavor either however if I was dining alone I would have been tempted to slip in a full chili!!

Tom Kerridge: The Hand and Flowers, Marlow

Two days ago it was my 30th birthday and I was lucky enough to visit Tom Kerridge’s 2 Mitchillin star restaurant, The Hand and Flowers in Marlow.

For the starter I opted for the Duck liver parfait with orange chutney and toasted brioche and Gav went for the Salt bake swede and haggis tart with crispy lamb, chantilly de cherve and wiltshire truffle.

The duck was without a doubt the bast starter I have ever had! It was amazingly creamy with such a delicate taste, I could have eaten it all night and left amazingly satisfied.

Mains

I enjoyed the Essex lamb bun with sweet breads and salsa verde and Gav went for the Half beer roasted chicken with caramelized cauliflower, sweet garlic puree, oak gravy and a mushroom crunch.

We ordered chips also….big mistake, we had no room for chips!

To wash it all down we drank a bottle of Pheasants tears with was dry and unfiltered. It has a light amber, pink color and a deep smokey taste, I will certainly be looking for this to add to my stock.

A great night with a relaxed atmosphere.

Oh dear, Aubergine pate 😞

It’s Sunday evening, normally on a Sunday I would cook something homely and hearty. Something to soak up the weekends alcohol and set me up for the week ahead.

Not tonight however. Tonight I made an Aubergine pate, a recipe from my griddling cook book.

It was truly awful! I actually like Aubergine but certainly not in this format. I ate the crudités but binned the dip.

I’m still hungry and feeling completely dissatisfied 😒

Chicken and Aubergine melt

Any of you lovers who have been following my blog will know that my other half Gavin is currently in China. 😓

This is bad enough but what’s worse is that Friday night is usually a fun food night!

Now I’m currently on a super health kick and it doesn’t feel so fun cooking for one on a Friday so I at least tried to make an effort tonight with this chicken and Aubergine melt!

Yes it was nice. I love a nice crispy ciabatta and melted mozzarella is just dreamy.

I sound kind of despondent about It I know. Really, on a Thursday night I may gush a little more about this dish but It just didn’t feel naughty enough for a Friday (for a start I’m sated but not stuffed, that’s great, but feels boring) CONFUSED!
