Hi guys, here is a little doozie from good old Jamie Oliver, this one is courtesy of his superfood book.

It’s healthy, tasty, so very fresh tasting and delicious! Try it!

Chicken Satay

Healthy and delicious midweek meals are not difficult when you put your mind to it.

This simple meal was completely satisfying on all levels. Tasty, filling, healthy, cheap and quick!

All you need to do is:

  • Coat the chicken in yoghurt, tikka sauce And lemon juice, then leave to marinate for as much time as you have
  • Chop up a salad of cucumber, tomatoes, green pepper, red onion and drizzle with a little good quality olive oil
  • Grill the marinated chicken for 5 minutes on each side
  • Griddle wraps to accompany the dish
  • Mix a little natural yoghurt with tikka sauce for a nice dip (spice it up with chilli sauce if you fancy!)

Easy!

Just little old chicken Kiev

Chicken Kiev conjures up memories of frozen hunks of processed meat with a watery garlic mixture oozing out. I don’t know about you, by history with chicken kiev’s isn’t good.

But I don’t live in the past and when I came across this recipe in Jamie’s comfort food back I though “Yes, let’s make some good Kiev memories!”

This is one of the less complex recipes in this book, it was pretty straight forward to undertake and it did not require much prep work.

  
The result was marvellous! Soft tender chicken, oozing with a thick creamy butter and coated in a light crisp shell. Matched with a broccoli laden mash potatoe and sprinkled with fresh spinach, I found the whole thigh a hearty and comforting plate. A good Sunday dish id say.

Nibbles!!

For a party recently I wanted lots of nibbles and finger food and these little chicken satays were a big hit!

  
The chicken breast was marinated in soy sauce, garlic and ginger then griddled until just cooked through.

The satay sauce was simply peanut butter, stock, soy sauce and a drop of cream.

Then just put the sauce in a shot glass and stick in the mini kebabs! Delish

Friday night comes and I just want yummy, slightly naughty, fast food. But, I don’t want a takeaway as quite frankly, those available to me are less than satisfying. So, I ponder through my recipe collection for something that ticks all the boxes.

I tell you ladies and gents, this dish does tick all the boxes!!

This requires the minimal prep of mixing up the marinade and leaving the coated chicken for 40 minutes to soak up all of the flavors. Then it’s simply a matter of baking, cooking some rice and chopping up a quick salad. Easy and no requirement for me to be stood in the kitchen for hours.

As far as levels of yummyness go, I really can not explain what a taste sensation this turned out to be. The chicken was sweet, sticky and wonderfully moist and the salad offered a sweet and zingy side.

This dish would be brilliant in a summer bbq.

But be warned fellow foodies, these are calorific making them only allowable as a special treat! I enjoyed these on movie night….my naughty night ☺️

They are a creamy, cheesy, crispy contender for gold!

Serves 2

  1. Bake 2 chicken breast in an oven at 180 (wrapped in foil to keep it moist)
  2. When cooked, shred the chicken
  3. Mix the shredded chicken with 250g Chilli soft cheese, 100g grated monetary jack cheese, a drop of hot sauce (to suit your heat ability) and seasoning
  4. Heat sunflower oil in a frying pan
  5. Spread the chicken mix over a tortilla wrap and sandwich with a second wrap
  6. Fry until golden on both sides
  7. Enjoy!!!

Tikka Tastic

Here is a low fat chicken tikka recipie which allows you to enjoy this class I dish without feeling the guilt of excessive calorie consumption!

Granted, it does lack the luxury creamy quality that a tikka typically provides but for a week day dinner I don’t think it’s a worry complaint.

I scored additional brownie points with this dish as its a bit of a favorite of Gavs! 😄

   
     

Jerk! (Chicken)

Tom Kerridge made another appearance in my house over the weekend. OK, so it wasn’t actually Tom in the flesh, but his new recipie book did feature in my food adventures, to be specific, the Jerk Chicken.

It’s not the 1st time I’ve noshed on this spicy poultry but Toms tip of oven cooking with a steam element (from a water bath under the chicken) is NOT to be ignored! Honestly, I cooked the chicken pieces for 45 minutes. I thought to my self “this is going to be dryer than the Sahara itself” but to my surprise and delight, it was as moist as moist can be!  

A simple dish with a fiery flourish…go for it. (Not sexy to eat though, unless sexy to you is carnivorous finger lickers)

   
   

Pasta a la Monday!

After a 5.45 am start, a 90 minute gym session, a long day in the office and a pitch black dog walk…tonight my body craved carbs!

I whipped up this simple yet tasty tomato and chicken pasta (it would have been 100% healthy too if not for the cheeky addition of creme fraiche) 

  

  • Boil some Whole wheat pasta
  • Whilst it boiling fry Shallots and Courgette in Olive oil
  • Add a tin of chopped Tomatoes
  • Season
  • Stir in cooked chicken breast pieces and the Creme Fraiche
  • Mix into the pasta and sprinkle with Parmesan to taste.

Easy peasy and done in under 20 minutes. It doesn’t lack on flavor either however if I was dining alone I would have been tempted to slip in a full chili!!

Kitchen surprise: Breaded chicken wraps

I raided the kitchen and whipped up this tasty, slightly naughty dinner last night. I’d treat myself to a tipple of wine and so didn’t want to be in the kitchen an age, but I was hungry and needed substance!

Breaded chicken wraps with rocket and sundried tomato salad

 

Super easy:

  • Cut a chicken breast in to slices, coat in flour, egg and breadcrumbs (I mixed paprika in with my bread crumbs) then gently fry
  • Fry onions and peppers 
  • Place the chicken, onions and peppers in your wraps and pop under the grill to toast
  • Mix up your salad: I used rocket, sundried tomatoes, olive oil, lemon and seasoning
  • Serve!

Really easy. Relatively quick. A taste of slight guilt food for a Friday night!
