Monday night equated to noodles. Chicken and veg Chinese style to be specific.
Such an easy recipe ( I know I always say that but it was!) but with such a flavor some outcome! I actually made a change to the recipie, I had some Chinese plum sauce that needed using and so instead of teriyak, I used that. A great sweet flavor resulted!
Once upon a time I thought the only way to add flavor to noodles was by the sauce that you slather on them. I now thank the day I discovered you could boil them in stock!!!
I halved the recipe but I still got a good three portions from it meaning I’m having super tasty lunches this week!
I would really recommend this dish to my fellow noodle lovers.

As always I search for healthy midweek meals which are filling, satisfying and don’t leave me turning for s sweet treat. This recipe is courtesy of the YUMMLY app which I have mentioned many times before and highly recommend you download….. Its free!!!
2 chicken Breast
200g Pasta (your choice)
A bunch of Asparagus
2 Garlic cloves
1 tsp of paprika
1 tbsp of Soured cream
salt and pepper
1. Cook the pasta
2. Griddle the chicken in oil and the crushed Garlic
3. When cooked, add the asparagus and paprika
4. Add the cooked pasta and soured cream, season to taste and serve
I found it really creamy and quite sweet despite having only the small dollop of soured cream, the chicken was super tender and overall, it was a great mid week dish……..something I would defo whip up again!
As per usual I try and make a batch of healthy lunches to carry me through my working week. I find this prevents me from:
A. Going out and making bad, hungry choices and,
B. Going out and SHOPPING!!! 👛
This week I used the “YUMMLY” food app that I’ve previously mentioned (it’s great) and made a chicken, sweetcorn and noodle soup.
As with most soups it was pretty much a one pot job. Chuck everything in a pot and leave it to work its magic.
A very simple recipe with a good outcome. The soup is tasty, perhaps a little salty, but offers me a good dose of protein and carbs to see me through my gym session.
Despite my best intentions, I ate the soup today but still went out shopping!!!!! 😯

This is bad enough but what’s worse is that Friday night is usually a fun food night!
Now I’m currently on a super health kick and it doesn’t feel so fun cooking for one on a Friday so I at least tried to make an effort tonight with this chicken and Aubergine melt!
Yes it was nice. I love a nice crispy ciabatta and melted mozzarella is just dreamy.
I sound kind of despondent about It I know. Really, on a Thursday night I may gush a little more about this dish but It just didn’t feel naughty enough for a Friday (for a start I’m sated but not stuffed, that’s great, but feels boring) CONFUSED!

Monday night I forced a healthy tea down me and the Jones, it was the only good thing to do after such indulgence.
I cooked from a little recipe book I have which boasts fast and easy meals and this one fit its description of being both!
It was a nice meal, very comforting but with the knowledge of it not stretching the waist line further!
I loved the tarragon flavor, it’s a herb I’m crushing on right now, and I substituted the creme fre for a low fat alternative.
(Oh I did also make garlic bread, just a baguette fried in butter and garlic, 😁 ok, that bit wasn’t sooo healthy!)
