Brioche! Nutella! Mango! Chocolate Ice Cream!

Literally toasted Brioche, slathered in Nutella and then loaded with sliced Mango and Chocolate Ice Cream!

What do I do when I’m bored? Get in the kitchen! 😄

I pulled out an old weight watchers recipe book and decided on a beautiful summer dessert in homage to the glorious weather we are having here in Cheshire, U.K.


This is such a satisfying recipe to undertake, watching the egg whites transform into a heavenly, shiny, marshmallowy mix is just such a great thing to experience. 


It’s slightly time consuming but really requires little effort….just some waiting. Once you have mixed the meringue you can take 60minutes for yourself (I watched some “4 in a bed”!) whilst you wait for it too cook and cool. Then it’s simply a matter of filling and rolling.


Now I’m normally quite good at weighting but I had to dive right in and cut a slice. Heaven!!!

It’s a really versatile recipe too, I think next time I plan to make this for friends but I’m going to fall to the darks side and use cream and caramel! 😈

Cured eggs: Day 1

Vegetarian

So after recently learning about cured eggs, and happening to have some spare yolks going today, I’ve decided to give it a go!

  • Mix 250g of sugar and 250g salt
  • Put 1/2 of the mixture in a bowl 
  • Lay the yolks gently on the mix
  • Cover the yolks with the final 1/2 of the salt mix
  • Wrap in cling film so it’s air tight and chill for 4 days.

Now the wait begins, I’ll let you know how it goes folks! 

A naughty little fakeout

Fancy something naughty but not TOO naughty? Fancy something cheesy? Fancy something similar to a pizza but not a pizza? Well your luck is in! Try these…..


* This was my portion for 1!

  • 2 English muffins, halved and toasted
  • Spread a mixture of tomato purée and BBQ sauce on the toasted muffin
  • Add ham and cheese and then grill

Easy peasy pizza squeezy!

Really fast to make….5 minutes tops!

These are actually not too bad on the fat and calorie count and as you can imagine, are open to your own interpretation. Next time I’ll be jazzing mine up with spice!

Cod with a summer grilled salad

Summer is here, we have the reddened skin and smily faces to prove it, and one thing I love more than anything in summer, is the light tasty meals that keep us content. We don’t need steaming hot bowls of soup or the comfort of stodge, it’d s great time to feel healthy!

This dish is a summer doozy, it’s the epitome of simple and its fresh zingy taste makes it a great lunch or dinner for a high temp day.


All you need to do is:

  • Put the griddle on high, slightly oil your asparagus, chopped red peppers and Cod and when hot, griddle for about 3 minutes each side, turning everything in the pan for an even cook.
  • Meanwhile, slice some fresh avocado and a lemon
  • When the fish is cooked and the veg charred, serve it all together with a wedge of lemon and a drizzle of a sticky balsamic glaze.

Beautiful, refreshing and light!

Peanut butter Chocolate truffles

If you want an easy peasy little sweet to make, this is the one for you!

Simply do the following:

  1. Mix 250g cream cheese with 50g of peanut butter (or more if you fancy a stronger peanut taste) 2 tbsp powdered sugar and 50g chocolate chips.
  2. Spoon out the mixture and roll into bite size balls. Place these in the fridge to chill
  3. Melt 300g dark chocolate. When melted, cover the balls in chocolate. That’s it! But you can decorate them if you so desire…..I did.

They are quite decedent, very creamy and sweet. My top to you would be to make them slightly smaller tun your tempted to do.

Paella isn’t my favourite dish due to its faffy nature. I don’t love getting my fingers dirty with food and especially not with fish as sometimes it can reduce my enjoyment, but every now and again I’ll relax my issues and I’ll tuck in. 

That time recently came and I put together a fresh, seafood filled dish which actually was really very good.

The rice was fluffy and deep in flavour and the meat was a bountiful array of squid, mussels and prawns. Fresh is the key word here and it really delivered on that front. 

 

Nommy nom nom salmon

Ummm ummmm ummm this sweet salmon with sticky coconut rice and fresh greens tasted soo good that I lost my ability to speak!

Easy, nutritional, healthy and quick…a fantastic post work out meal!

Simply make a marinade of:

  • 1tbsp runny honey, soy sauce, rice wine vinegar, sesame oil
  • 1tbsp grated fresh ginger
  • 1 chopped garlic clove

And marinade the salmon for an hour if possible.

Boil 75g per person of basmati rice, when cooked add salt, pepper and 100ml coconut milk and cook for another 5 minutes.

Whilst the rice is cooking boil some broccoli and green beans for just 2-3 minutes, keep them fresh! 

Also grill the salmon for 4 minutes each side. Then serve!

A really light but supremely flavoured dish, the garlic and ginger really zing on your tongue and the creamy rice just takes off the edge. As i said…..nom!

  

Healthy tiramisu

I haven’t made anything sweet in a while so I dived into the recipe collection and pulled out this little whippet.

  
Tiramisu but made with quark and yoghurt rather than the heavier alternatives such as cream or mascarpone.

  
I haven’t eaten it yet but I tasted throughout the making process and it’s a really light version. Just sweet enough with the coffee kick from the coffee and liqueur.

This dish seriously fills me with excitements and has my mouth watering far too much.

Avid followers of this blog will know I’m a recent convert to the almighty noodle but this dish reached heights which are near to ecstasy…..no fibs.

I’m can quite literally taste and feel the moist, buttery, chunky steak pieces filling my mouths with sweet juices (*Homer Simpson food appreciation noise)

As always it was a super easy, super fast recipie with stupefying results. Best of all…..healthy.
