Friday feeling: lunching!

Summer flan

Summer nights call for light scrumptious dishes and this meets the brief. This tomato and rocket flan throws fresh, vibrant flavours at you and treats you to a naughty pastry punch.

You can of course make your own pastry but in this case I didn’t…..hands slapped!

So all you need to do is:

  1. Put your pastry in your dish and blind bake for 10 minutes with baking beads, then bake for a further 5 minutes without the beads
  2. Whilst baking whisk 4 eggs with 150g chedder cheese, 150ml double cream, salt and pepper 
  3. Also roast 250g cherry tomatoes in olive oil
  4. When ready, fill your pastry case with as much rocket as you desire, plus the cooked tomatoes 
  5. Then fill the case with the egg mix and bake for 25-30 minutes until golden
  6. Serve with a simple side salad!


Curried vegetable stew

Spicy, Vegetarian

It shouldn’t feel like winter but it does! And when it’s this blooming cold I simply want a wholesome, hot and comforting lunch at work.

This dish meets the brief plus it’s cheap and simple for added bonu points.


All you need to do is:

  1. Chop 1 onion and fry in olive oil until softened
  2. Add 2 chopped carrots, parsnips and potatoes to the pan and fry for a further 3 minutes
  3. Cover the vegetable mixture in 1litre of vegetable stock and mix in 1tsp of cumin, turmeric, chilli (amend to your taste)
  4. Leave to simmer until the mixture has reduced slightly and then it’s done!

*serves 4 portions

If you find its a little thin you can add cornflour to thicken. Plus if you need a heartier meal you can add rice, or a naan, or both!! Yum

I’m not really supposed to be spending mulah at the moment but I saw these yesterday (in the sale too!) and I couldn’t resist. Last night, in a terribly uncool way, I had great fun filling them with today’s breakfast and lunch!

  
Overnight maple and toffee oats for after the gym, and for lunch, rye crisp breads with cream cheese, tomatoes and relish.

A healthy day ready for a somewhat naughty movie night tonight!

Tuesday Trim

I had annual leave yesterday and so Tuesday this week is the first day of my working week and being “back on it!”

In a complete effort to be super duper healthy I hit the gym for 90 minutes this morning and prepared a packed lunch of ultimate “Health” foods.

Breakfast Smoothie

  • Bananas
  • Whey (Vanilla)
  • Kale
  • Almond milk
  • low fat Greek yogurt
  • Pineapple juice

 Lunch

  • Two hard boiled eggs
  • Kale
  • Pineapple cottage cheese

 
OK, double Kale I here you say? Well, I had Kale speeding towards its sell by date and I hate waste!

I have to be really honest though, I was in no way looking forward to lunch. Feeling starving I really wanted something hearty and better than what I perceived my lunch to be but seriously, I thoroughly enjoyed it and feel really satisfied.

Tapenade on rye

Lunch today was simplicity made heavenly. An olive and pepper tapenade on rye crisp reads. A salty, moorish treat.

Really simple to do, simply roast some sweet peppers and then blitz with mixed olives. Any one can make this and for my blending needs, I used the nutribullet.

A great lunch which I throughly looked forward to.

  

Altrincham market house

A friend, long time unseen, visited me at work today for a lunch date. We went to the Altrincham Market House fort he first time and what a little gem it was!

 
Think, upper class food hall.  

It’s a reasonably sized room with a collection of tables in the middle, around the outer edge there must be about 10 different mini food outlets (and a bar 😉) serving a collection from pizza to tapas to cakes!

The food seemed to average around £10 per meal and the atmosphere was just so cool and relaxed. I full on loved this place!! I’ll be back!

Vegetarian samosas

As I am alone this week I look on the opportunity to eat meat free, healthy dishes with out complaint from the Jones over the lack of meat.

I’ve looked over this recipe for samosas for some time now, passing it off as a starter and trying to keep it in mind for when the need for an Indian stater arises. But as I looked over it at the weekend I thought why not make it as a main with salad? And do that’s what I did!

It’s a rather hearty dish really, lots of veg with a dose of seasoning. I halved the recipe but still ended up with mixture to freeze…no bad thing.

It was great tasting and really nice, different lunch to take to work. Easy, cheap, different, what’s not  to like?

  


 

Fruit and meat: CONTROVERSY!!!

Dare I say it?

Well I just did. I’ve heard a lot of mixed views over fruit mixed with meat, I understand some people can’t stand the idea. Weird. I love fruit in a savory dish!!!

In an attempt to make a high protein lunch I made a chicken salad which included pineapple cottage cheese! It was rather marvelous, the sweet fruity punch with my tender moist chicken…a meal I’ll surely be repeating this week.

It simply consisted of:
chicken breast (cooked in oregano)
lettuce
pineapple cottage cheese
spicy chillies

High protein. Low fat. Just a shame I missed my morning gym session. Whoops!
